Omelette with a twist

I admit being back at school, I've been fairly busy lately. But hold your breath waiting for my fabulous insights no longer. A wegmans trip is in the works tonight, with some delicious baked goods and dinner recipes to follow.

For now, what I call (since I made it up)....

Mexican Omelette

3 tablespoons of salsa
1 oz of shredded cheese
1 egg white
1 egg
2 tsp cilantro
2 tsp oregano
pepper to taste

Grease small skillet, and heat to medium heat. Beat eggs in a bowl, add sprinkle of pepper, and half of the seasonings in the bowl.

Mix.

Pour into skillet, and swirl until the underside is brown, and the egg is not liquid anymore. Sprinkle the remaining seasonings. Add cheese and salsa to one half.

Let cook for about a minute. Fold the omelette. Lower heat and allow to heat for about 3 more minutes.

Voila, tasty, flavorful omelette with a twist.
Basically I just made this up out of leftovers in my fridge. Charged as guilty, left-over salsa from party that needed to be used up.

Plus, this is only about 220 calories. Healthy yummy side for dinner, or a great breakfast.
