6 oz cheese
1/2 lb chicken
1 onion
1 tomato
1 package of frozen spinach
1 clove garlic
1/2 tsp cloves
Pepper
Marjoram
Cilantro
1. Preheat the oven to 350. Grease a 9 inch glass pie dish
2. Dice the onion and garlic. . Add 1 tbsp oil into a heated pan. Cook the onions and garlic until translucent. Add the spinach (which should be thawed beforehand) and heat until the excess water is cooked off. Remove from heat and set aside.
3. Dice the chicken and brown in a saucepan.
4. Add eggs, and seasonings, and beat. Dice the tomato and add.
5. Shred the cheese and add the cheese, spinach mixture and chicken to the eggs. Mix well.
6. Place in the oven. Cook for 30 min. The edges should be brown when the quiche is finished.

That looks like a nice healthy quiche -- a far cry above anything I made in college!
Yum! I heart quiches. Hey, I've been thinking about the 100 mile challenge/diet. Needless to add, I have several reservations - would appreciate all thoughts.
