College Food Continued

In my ever continuing quest to find decent food that is easy to make and somewhat healthy I am trying the making food in bulk and freezing it. I recommend Jumbalaya, with a warning however. I love spicy food, but if you eat it on a really empty stomach, you are not going to feel so hot. 

This recipe is pretty good. I substituted turkey sausage, used 1.5  lbs turkey breast and really upped the spicy factor (1 tbsp hot sauce, 1.5 tbsp cayenne pepper, and 2 tbsp chili powder) I  ended up  adding about 6 cups of broth, 1.5 when cooking the veggies and the remaining when I added the meat, and then the rice. 

I froze it, and voila, instant lunch and dinner. 
1. put a 1/4 cup in a wrap for lunch
2. eat in a bowl like stew
3. have it over rice

Spice to you taste. Also you could probably add more vegetables.
