For some reason, tuna sandwiches always conjure up associations for me of 50's housewives in aprons slaving over smelly casseroles in the kitchen. I've avoided tuna in any form for my entire life, and I decided it was finally time to face my tuna eating fear.
Tuna Melt--Jen style
Makes 2 sandwiches--about 300 calories each
1 can tuna
2 tsp minced garlic
1/4 minced onion
1 tsp lemon juice
pepper to taste
1 oz cheddar cheese
a little gouda (or another flavored cheese)
Throw the onion and garlic in a non-stick pan (spray with pam first) over low medium heat. Cook for about 3 minutes, just enough to mellow the raw flavor. When it begins to brown, it's probably cooked enough. Take off the heat set aside. Put the tuna, onion/garlic, lemon juice and shredded cheese in a bowl. Mix.
Raise the heat up medium, medium high. Respray your pan with Pam.
Butter 2 slices of bread ( I use about 1 tbsp total of I can't Believe it's not Butter Light Spread)
When the pan is hot, put down one slice of bread, butter side down, spoon half the mixture in and place the 2nd piece of bread, butter side up. Cook until golden-brown (ala grill cheese) and flip.
I've never liked tuna before, but this was actually yummy. I just made it up.
