A whole grain includes the bran, germ and endosperm( or kernel). The bran is an outer layer composed of fiber which protects the kernel. The kernal is composed of starch granules. Inside the kernel is the germ; it is composed primarily of vitamins, minerals and unsaturated oils and is a concentrated source of energy.
2. Why you should eat them
In conventional milling the bran and germ are removed in order to enable longer storage and easier digestability. This removes fiber, Vitamin B and Vitamin E, anti-oxidants, magnesium and iron. By eating whole grains you get all the above goodies. There's also evidence that eating whole grains
-reduces the incidence of some forms of cancer, digestive system diseases, gum disease, , diabetes, obesity, and coronary heart disease
3. Just eat some already...It's easy to add to your daily foods; just switch your regular foods to ones with whole grains
-bread
-pasta
-flour

Easy Non Fat Whole Wheat Bread
1 1/2 cups buttermilk
1/2 cup cornmeal
2 1/4 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1/2 cup apple cider molasses™
Preheat over to 325°F. Lightly grease a loaf pan. Put dry ingredients into a mixing bowl. Stir to combine. Add liquid ingredients and mix until just combined. Pour into loaf pan and bake about 1 hour until a toothpick inserted in the center comes out clean. Cool on rack.
